The food and beverage industry comprises companies that are involved in the process/ manufacture of raw food materials, packaging, and distribution of their finished goods. It is inclusive of fresh, prepared foods and packaged ones, as well as various kinds of beverages (alcoholic or non-alcoholic). Any product meant for human consumption, aside from pharmaceuticals, is considered to be under this industry.
Since these goods are meant to be consumed by humans, safety and quality of these products must be embedded in the entire manufacturing process. This is achieved by strict adherence to industrial protocols and guidelines together with effective manufacturing processing techniques, and use of primary engineering controls (PECs) and secondary engineering controls (SECs).
Current food good manufacturing practices (cGMP’s), Title 21 of the Code of Federal Regulations, Part 110 (21 CFR 110), contains description of methods, equipment, facilities, and controls for producing processed food. This regulation specifies the industry's requirements on appropriate personal hygienic practices, design and construction of a food plant and maintenance of plant grounds, plant equipment, sanitary operations, facility sanitation, and production and process controls.
cGMP serves as basis for FDA inspections as part of the overall regulatory control over the safety of the nation's food supply.
